How to Make Divinity Candy Recipe
Use parchment paper to line baking sheets.
Prepare a medium heavy saucepan and add a candy thermometer to the pan.
Add the sugar, corn syrup, and water to the pan and heat on medium until the ingredients meet a hardball stage. The temperature will reach 250-260 degrees F.
While your ingredients are cooking, begin to beat the egg whites to form stiff peaks.
Once the sugar is at the right temperature, take away from the heat and gradually add to your egg whites, on high speed, whip continuously.
Pour in the vanilla and beat again until the candy starts to hold its shape. You will do this for about 10-15 minutes.
Before use, spray the cookie scoop, then arrange scoops of dough onto the baking sheets.
Add your desired garnish right after, I used pecans.
You will need to let the candy dry and harder for several hours or overnight for the best results.
Then, store the rest of the candy in an airtight container for up to 2 weeks.
How do I Store Divinity Candy?
You will need to store the Divinity Candy correctly for it to last the longest. Store this candy a couple of different ways. You can store in an airtight container, Ziploc bag or wrap tightly in plastic wrap.
How Long Does it Take for Divinity to Harden?
It can take several hours for the Divinity candy to harden. You will want to give it enough time for the best results. I like to plan on giving it overnight to set and harden before enjoying it.

Divinity candy can be stored in an airtight container at room temperature for up to 2 weeks. It can also be stored in the refrigerator for up to 1 month. If you are storing divinity candy in the refrigerator, let it come to room temperature before cutting it into squares.
Divinity is a confection made from egg whites, corn syrup, and sugar. It's similar to nougat, fudge, or marshmallow. Tip: replace the sugar with brown sugar to create "sea foam." Other ingredients can be used to give the candy other tastes, like chopped dried fruit and chopped nuts.
In a meringue, the sugar syrup is cooked to about 240°F or until the sugar forms a soft, malleable ball when a spoonful is dropped in cold water. For divinity, the sugar is taken a bit further to 250°F (or the firm ball stage) where it can hold more structure.
Divinity candy is an old-fashioned confection made with very simple ingredients such as sugar, egg whites, water, vanilla, and corn syrup. It is nougat-like in texture, but slightly lighter, and nuts, dried fruit, or candy are often added.
As sugar attracts water, any humidity or moisture in the air can affect how your divinity turns out. Divinity should be dry and set within two hours, but have patience.
Layer fudge pieces or divinity between waxed paper in an airtight container to prevent from quickly drying out. Store at room temperature up to 2 days or in the refrigerator for up to 1 month.
Corn Syrup – This is added to stop the sugar from crystalizing giving you a very smooth, chewy texture that's not grainy. Sugar – White granulated sugar is the best for this recipe, avoid brown sugar or it'll affect both the taste and look of the divinity.
Consider this: divinity hates humidity. It's best to make divinity on a cool, dry day. If it's humid (over 50%) or rainy, the candy might end up with a more gooey, or grainy texture.
Divinity candy stays fresh even at room temperature for 10 to 14 days. The heat from the sugar syrup removes the danger of the egg content spoiling. To store the divinity candy, line an airtight storage container with wax paper.
There could be several reasons that your divinity did not turn out fluffy: The syrup was not at the right temperature when it was added to the egg whites. The egg white and syrup mixture was not beaten long enough. The humidity was too high.
The exact origins of divinity candy are a bit murky, but it is believed to have originated in the Southern United States, particularly in the early 20th century. This sweet delicacy quickly gained popularity due to its light and airy consistency, making it a favorite during holidays and special occasions.
Humidity is nothing more than water vapor in the air and, as the moisture does with meringue and with many candies, it will almost always affect the way your divinity turns out. Shoot for a 40% or lower level of humidity.
Christmas Nougats Mix. Essential holiday flavors of peppermint, wintergreen, and cinnamon come together to create Holiday magic in Brach's® Christmas Nougat Mix. Each piece of quality nougat is individually wrapped making it the perfect treat to fill up your candy dish or centerpieces.
Some American confections feature this type of nougat as the primary component, rather than combined with other elements. Varieties of nougat are found in Milky Way, Reese's Fast Break, Snickers, Double Decker, ZERO bars, and Baby Ruth bars.
UPDATE: Found out you can select multiple items in the inventory, put them "in hand" then move them all at once, not bad once you get the hang of it. In the inventory screen there in actions menu will be a "send to Lady Vengeance" option. This sends anything to the storage chest.
After you finish act 1 and beat the boss you will have a ship with a chest. You can send items to the chest from wherever iirc, I don't use it much. It's on the second floor or the third floor.
Humidity equals wet, and wet equals candy that often won't set. Even in the cooler and less humid months, it can be a challenge to make old fashioned divinity - that being a divinity that is purely sugar, corn syrup, water, egg whites, chopped pecans, a little vanilla - and a goodly amount of elbow grease.
